Indian Spiced Summer Squash

This is one of my favorite squash recipes that includes a touch of Indian spices. Yellow and green squash are bountiful in the summer-time. They and packed with potassium, low in calories, and easy to prepare.


Ingredients

  • 2 pounds green and yellow summer squash

  • 1 Tbsp. coconut oil

  • 1 tsp. ground cumin or cumin seeds

  • 1 tsp. turmeric

  • 1/4 tsp. salt

  • 1/4 tsp. cayenne pepper or to taste

  • 2 tsp. ground coriander

  • 1/2 tsp. garam masala

  • 1 Tbsp. lime juice

  • 2 Tbsp. chopped parsley or cilantro


Trim ends and slice squash into 1/2” thick pieces. Set aside

Heat oil on medium-high heat in a large saute pan with a tight-fitting lid. Add cumin and cook until golden brown, about 30 seconds. Add squash and stir 30 seconds.

Stir in turmeric, salt, cayenne pepper, and coriander.

Add 1/4 cup water. Reduce heat and simmer, covered, until squash is tender, about 5 minutes.

Remove from heat and sprinkle garam masala and lime juice over mixture and stir. Transfer to a serving platter and garnish with chopped parsley or cilantro.

Serves 4-6
