Kale Salad with Cranberries

Make this salad ahead of time. Let it sit overnight to soften and soak up all the yummy juices.

Kale salad with cranberries and pine nuts

Salad Ingredients

  • 1 bunch of curly Kale, torn into pieces

  • 3 Tbsp. feta cheese (use goat feta if allergic to cow’s milk)

  • 2-3 Tbsp. dried cranberries

  • 3 Tbsp. walnuts or toasted pine nuts

Dressing

  • 1/2 cup olive oil

  • 2 Tbsp. Braggs Liquid Aminos or Coconut Secret Coconut Aminos

  • Juice of 1 lime or lemon

  • 1 Tbsp. Dijon mustard


Whisk dressing together until well blended. Toss dressing and remaining ingredients with Kale and let it sit overnight. The Kale will soften and absorb the juices from the dressing.
